I have eaten tough steak in my life, but I have NEVER experienced a hamburger (made of bison, beef, elk, or venison) that I could literally not take a bite of or was so tough that it was seriously difficult to tear into pieces, or witnessed my dog forced into chewing a piece of meat before he could swallow it. I know this review sounds crazy exaggerated, but every word is true. I rarely write a review but after cooking these ground bison patties two different ways, (BBQ'd on the grill and fried) I had to speak up. The package had 4 patties in it. I tried grilling the first two and they were so tough I thought maybe it was my fault so I decided to give the other two left a chance because surely ground meat can't possibly be too tough to chew and swallow. That's where I was wrong. It wasn't my cooking method, because those fried patties were, if possible, were even more tough than the grilled ones! I eat bison frequently and have even had the pleasure of eating bison that a Native American friend shared from hunting and never, ever had an issue with the tenderness of the meat until I bought this package of 4 burgers. Force of Nature is an appropriate name for this meat company because it definitely takes a force of nature for human and dog alike to chew.
I paid more than I do for ground beef because I understand bison costs more to raise, is leaner, and is a specialty product and with the expectation of superior quality. Unfortunately, I was extremely disappointed and I want a refund, but I got them 3 weeks ago and have since thrown the receipt away which leaves this customer with an added bad taste in her mouth.
