ABUELA'S BISON TONGUE BARBACOA TACOS WITH TOMATILLO SALSA

FOR THE BISON TONGUE

INGREDIENTS:

  • 1 Force of Nature Bison Tongue
  • 1/2 Onion
  • 2 Garlic Cloves (Whole)
  • 4 Allspice (Whole
  • 3 Bay Leaves
  • 2 Tablespoons Salt
  • 1 Tablespoon Pepper
  • 2-3 corn tortillas per person

ADDITIONAL TACO TOPPINGS:

  • 1 - 2 avocados (sliced)
  • 2 Limes (sliced) 
  • 1 bunch of cilantro (garnish)
  • chopped onions

PREPARATION:

Once thawed, remove the tongue from packaging and rinse with lukewarm water. In the crockpot, place the tongue on top of half the onion, garlic, allspice, bay leaves, salt, pepper and 3 tbs of water to and allow to cook together on low for 8 hours. Remove only the tongue from the pot and allow it to cool. After it has cooled enough to touch, peel the pale colored skin off the tongue and discard. Once the tongue is peeled, place in a bowl and use forks to shred the meat. Now add meat to the tortilla, top with avocado, salsa verde, cilantro, chopped onions or any of your favorite tacos toppings and ENJOY!
