1lb Force of Nature regenerative beef ancestral blend | 1 small onion, diced | 1 small can of diced green chiles | tortillas | cheese | 1 can enchilada sauce | 1 large avocado | 1 bunch of cilantro - chopped | chives - chopped (optional topping) | Sliced lime (optional topping)
- Heat oven to 350 degrees. Spoon some enchilada sauce in the bottom of a 9x13 casserole dish.
- Cook beef until browned. Remove from the pan using a slotted spoon. Saute onion in remaining grease until soft. Return beef to the pan and add in 1/4 cup enchilada sauce. Stir to combine.
- Assemble enchiladas with beef mixture and cheese. Roll and place the seam side down in the prepared dish. Cover enchiladas with additional enchilada sauce and a sprinkle of cheese. Bake for 20 minutes uncovered.
- Serve with avocado, cilantro and any additional toppings you choose. ENJOY!
