Salt & pepper to taste (add on any of your favorite steak seasonings)
Preheat oven to 350 degrees.
Wrap one strip of Iberico bacon around each steak.
Pat the meat dry with a paper towel.
Season all sides of the meat with salt and pepper to taste.
On the stove using high heat, heat up the preferred cooking oil in a large oven-safe skillet.
When the oil is hot, sear both sides of the steaks for about 1 - 2 minutes.
Remove the skillet from the stove and place into the oven for 7 - 10 minutes (or until the internal temperature reaches 130 degrees for medium-rare). Check frequently, bison is lean and can overcook easily.
Remove the skillet from the oven and let the meat rest and cool off for 5-10 minutes before serving.
