ONE PAN ROASTED CHICKEN THIGHS & GOLDEN POTATOES W/ HOMEMADE TZATZIKI SAUCE
INGREDIENTS:
- 1 Pack Force of Nature Pasture Raised Chicken Thighs
- 4-5 Golden Potatoes - Cut into cubes
- Olive oil
- 1 lemon
- Poultry Seasoning
- Salt to taste
- 1 ½ Tbsp garlic powder
- 1 tbsp onion powder
- fresh cracked black pepper to taste
- 1 container of greek yogurt
- ½ cucumber - diced and seeded ( To seed: Lay the cucumber on a cutting board and cut the cucumber in half lengthwise with a sharp knife. Gently scoop out the seeds by gliding the tip of a spoon and dice).
- ½ freshly squeezed lemon
- 2 tbsp extra virgin olive oil
- 1 tbsp garlic powder
- 1 tbsp salt
- ½ tbsp fresh cracked black pepper
- 3 tbsp fresh chopped dill
PREPARATION:
- Preheat your oven to 425 degrees with the baking sheet inside.
- Remove the chicken thighs from the Force of Nature packaging
- Pat the chicken dry with a paper towel
- Season the chicken heavily with the poultry seasoning, salt, garlic powder, and onion powder.
- In a bowl, season the cubed potatoes with a generous pour of extra virgin olive oil, garlic powder, onion powder, salt, and pepper.
- Remove the hot baking sheet out of the oven and place the cubed potatoes in the pan (you should hear a sizzling noise here)
- On the same pan, wedge the seasoned chicken thighs among the cubed potatoes
- Roast for 25 minutes and then drizzle some olive oil over the chicken thighs and place back into the oven for 20 more minutes.
- Add the tzatziki ingredients to a bowl, mix well, and set aside.
- After roasting for 45 minutes, turn off the oven with the baking sheet of chicken and potatoes inside, and let cool for another 15-20 minutes
- Remove the baking sheet from the oven
- Squeeze a lemon over the roasted chicken
- Drizzle the homemade tzatziki over the roasted potatoes and chicken thighs and enjoy!
