Pan Roasted Tomahawk with Amaro Persimmon Jam and Ruth Wakefield's Dinner Rolls - A Time & A Plate Recipe

For the Steak:
- 1 Tomahawk Steak
- ½ Pound Good Butter
- Fennel Seed
- Black Pepper
- Good Sea Salt
- Good Olive Oil
- 2 Sprigs Rosemary
Grind your black pepper and Fennel seed in a mortar and pestle until the spices have just begun to split. If you add your sea salt to the pestle it can help to assist in the grind and keep the spices from bouncing out of the bowl.
Marinate your steak liberally with the salt and spices and good Olive Oil.
Pre-heat your saute pan on medium high heat, before placing your steak in. Place the steak in fat side down in the pan, allowing the fat to render from the steak, essentially cooking the steak in its own tallow.
Once a good amount of the fat has rendered, place the steak on its side. Flipping every 90 seconds. Once the steak has begun to brown sufficiently on each side, add your butter and rosemary and place in a 350 degree oven and continue to cook.
Check every few minutes until it reaches an internal temperature of 125 ° F.
Let your steak rest for as long as you cooked it.
For the Jam:
- 1 Pound Ripe Persimmon
- ½ Pound Butter
- 1 Cup Honey
- 1 Cinnamon Stick
- 1 Pinch Good Sea Salt
- 1 Cup Good Amaro
If possible, Wrap your persimmon in a paper bag to ripen in a warm place in your house in advance. If not, make sure you pick persimmon that are ripe soft and supple.
Cut the persimmon away from the seed and then dice into small pieces.
Add the rest of your ingredients, place on a tray and broil in the oven until they develop a dark color.
Remove the cinnamon stick and blend until smooth.

Mesquite Bean Simple Syrup:
- 1 Cup Honey
- ½ Cup Water
- 1 Pinch Salt
- 5 Pods Mesquite Bean
Combine ingredients and boil in a sauce pan on low for at least ten minutes.
For the Dinner Rolls:

Follow Ruth Wakefield's classic recipe (above) to a Tee and you won't go wrong. This recipe is vague on the oven temperature but I suggest 350°F.
Place the Rolls in a cast iron snuggled together to bake and brush with the mesquite beans syrup heavily before and after baking.
ASSEMBLY:
Slice your steak into stripes, place your Jam in a beautiful serving dish and the Dinner Rolls alongside served simply in their cast iron. Looks great on a cutting board.
