SMOKED, BRAISED BISON SHORT RIBS

INGREDIENTS:

  • Force of Nature Bison Short Rib 
  • 3 tbsp dijon mustard 
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder 
  • 1 tbsp onion powder 
  • 3 cups beef broth
  • 1 cup red wine  
  • 1 yellow onion
  • 1 sprig rosemary 
  • 1 sprig thyme 
  • 3 bay leaves 
  • 2 cloves garlic 

PREPARATION:

  1. Remove the bison short rib from the Force of Nature packaging
  2. Pat short rib dry with a paper towel
  3. Rub the mustard over the entire surface of the short rib (this will create a nice crust on the meat)
  4. Season the short rib with salt, pepper, garlic powder, and onion powder 
  5. Smoke the short rib at 250 degrees for 90 minutes 
  6. Remove the short rib from the smoker and place on a clean plate
  7. Bring beef broth and red wine to a boil uncovered in a Dutch oven to flash off alcohol 
  8. Reduce to medium-low heat and add in yellow onion, rosemary, thyme, bay leaves, garlic cloves, short rib and cover 
  9. Let the mixture simmer on medium heat for 4 hours 
  10. Salt and pepper to taste. 
  11. Remove from Dutch oven and enjoy!
