SMOKED, BRAISED BISON SHORT RIBS
INGREDIENTS:
- Force of Nature Bison Short Rib
- 3 tbsp dijon mustard
- 1 tbsp salt
- 1 tsp pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 3 cups beef broth
- 1 cup red wine
- 1 yellow onion
- 1 sprig rosemary
- 1 sprig thyme
- 3 bay leaves
- 2 cloves garlic
PREPARATION:
- Remove the bison short rib from the Force of Nature packaging
- Pat short rib dry with a paper towel
- Rub the mustard over the entire surface of the short rib (this will create a nice crust on the meat)
- Season the short rib with salt, pepper, garlic powder, and onion powder
- Smoke the short rib at 250 degrees for 90 minutes
- Remove the short rib from the smoker and place on a clean plate
- Bring beef broth and red wine to a boil uncovered in a Dutch oven to flash off alcohol
- Reduce to medium-low heat and add in yellow onion, rosemary, thyme, bay leaves, garlic cloves, short rib and cover
- Let the mixture simmer on medium heat for 4 hours
- Salt and pepper to taste.
- Remove from Dutch oven and enjoy!
