Smoky Super Bowl Meatballs

Ingredients for the Meatballs:
- 1 package of Force of Nature's meatballs (any of the three flavors will work great!)
Ingredients for the Smoky Chipotle Sauce:
- 2 tbsp olive oil
- 1/2 yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tbsp tomato paste
- 2 chipotles in adobo (seeded and chopped) + 1 tbsp adobo sauce - you can find these in small cans at any grocery
- 1/2 cup tomato sauce
- 1 cup beef broth
- 1/4 cup cilantro - chopped
- Salt, to taste
Preparation
Preheat the oven to 375°F and bake the meatballs for 12 minutes. Meanwhile, heat olive oil in a saucepan over medium heat, then sauté the onion until soft. Add garlic and cook for another minute. Stir in cumin, chili powder, garlic powder, and black pepper. Mix in the tomato paste, chipotle chiles, adobo sauce, tomato sauce, and beef broth, then simmer for 10 minutes until thickened. Season with salt and top with cilantro. Enjoy!
