Supa Fast & Delish Chicken Noodle Soup

You can't beat a classic. Simple ingredients, 20 minutes, and the kind of comfort only real food delivers. Pro tip: double the recipe — it's even better the next day.

INGREDIENTS: 

  • olive oil to coat pot
  • 1 lb of ground chicken
  • 1 tbs salt
  • 1/2 tbs pepper
  • 4 garlic cloves - minced
  • 1.5 tsp ground coriander
  • 2 celery stalks - chopped
  • 1 large or 2 small carrots - chopped
  • 1 large shallot - chopped
  • 1 tbs fresh thyme
  • 8oz pasta noodles of choice (or sub rice)
  • 8 cups chicken broth or stock
  • top with creme fraiche or labneh, parsley and or dill, and a squeeze of lemon.

PREPARATION:

  1. Sauté carrots and celery on low until they start to soften
  2. Add shallots. Sauté until veggies are soft.
  3. Add garlic. Sauté until fragrant.
  4. Remove veggies from pan and cook the meat until browned.
  5. Add salt, pepper, coriander and thyme - stir.
  6. Add veggies back to pot
  7. Add broth then noodles
  8. Stir and simmer until noodles are cooked.
  9. Top with preferred goodies and dig in!
