Supa Fast & Delish Chicken Noodle Soup

You can't beat a classic. Simple ingredients, 20 minutes, and the kind of comfort only real food delivers. Pro tip: double the recipe — it's even better the next day.
INGREDIENTS:
- olive oil to coat pot
- 1 lb of ground chicken
- 1 tbs salt
- 1/2 tbs pepper
- 4 garlic cloves - minced
- 1.5 tsp ground coriander
- 2 celery stalks - chopped
- 1 large or 2 small carrots - chopped
- 1 large shallot - chopped
- 1 tbs fresh thyme
- 8oz pasta noodles of choice (or sub rice)
- 8 cups chicken broth or stock
- top with creme fraiche or labneh, parsley and or dill, and a squeeze of lemon.
PREPARATION:
- Sauté carrots and celery on low until they start to soften
- Add shallots. Sauté until veggies are soft.
- Add garlic. Sauté until fragrant.
- Remove veggies from pan and cook the meat until browned.
- Add salt, pepper, coriander and thyme - stir.
- Add veggies back to pot
- Add broth then noodles
- Stir and simmer until noodles are cooked.
- Top with preferred goodies and dig in!
