Ancestral Chicken Lettuce Wraps With Grilled-Peach Gochujang Sauce

Force of Nature’s nutrient-dense ancestral blend is sautéed, then coated in a sweet-spicy sauce made from charred peaches, gochujang, miso, and soy. Served in crisp butter-lettuce cups with peanuts and scallions, it’s a hands-on dish that marries summer fruit with Korean flavors.

Serves: 6 | Prep: 20 min | Cook: 20 min

Ingredients:

Sauce:

  • 2 Tbsp gochujang · 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar · 1 tsp minced fresh ginger
  • 1 tsp minced garlic · 1 Tbsp white miso
  • Salt to taste

Preparation:

  1. Brush peaches with oil and season with salt and pepper; grill cut-side down until charred and soft.
  2. Blend peaches with sauce ingredients until smooth.
  3. Brown ground chicken in a cast-iron skillet; fold in peach sauce; simmer 2 min.
  4. Serve DIY-style: platter of lettuce cups, bowl of warm chicken, bowls of peanuts and green onions.
