Serves 4

Ingredients

Sandwich

  • 1 baguette, cut into 6-inch sections and sliced lengthwise

  • 1 pack Force of Nature Homestyle Beef & Cheddar Sausage

  • Extra virgin olive oil

Chimichurri

  • 1 bunch cilantro, finely chopped

  • 1/4 cup parsley, finely chopped

  • 1 shallot, finely diced

  • 1 red jalapeño, finely diced

  • 4 cloves garlic, finely diced

  • 1/4 cup red wine vinegar

  • 1/2 cup extra virgin olive oil

  • Salt, to taste

Cherry Tomato Salad

  • 1/2 cup cherry tomatoes, halved

  • 2 tbsp extra virgin olive oil

  • Juice of 1/2 lemon

  • Salt and pepper, to taste

Instructions

Remove the sausages from the packaging and butterfly them by slicing lengthwise without cutting all the way through. Open them up so they lay flat.

Brush the cut sides of the baguette with olive oil and toast in a medium-hot pan for 3 to 4 minutes until golden brown. Set aside.

Add a little more olive oil to the same pan and cook the sausages for 2 to 3 minutes per side until browned and crispy.

While the sausage cooks, stir together all of the chimichurri ingredients in one bowl and combine the cherry tomatoes, olive oil, lemon juice, salt, and pepper in another.

Spread a generous spoonful of chimichurri onto one side of the toasted baguette and top with the sausage. Spoon the cherry tomato salad onto the other half, close the sandwich, slice it in half, and enjoy.

Fair warning...this is a four-napkin sandwich.

Morgan's Cooking Tips

Butterfly the sausage. Slicing it open helps create more surface area, giving you even more crispy, caramelized flavor in every bite.

Toast your bread. A crispy baguette keeps the sandwich from getting soggy and adds the perfect crunch.

Don't be shy with the chimichurri. It isn't just a topping—it's the sauce that ties the whole sandwich together.
