Howdy! This is a good question. Wild Boar are naturally much leaner compared to farm raised pork. If we did not add in this additional fat, the end product would dry out very quickly while cooking. It is critically important to us that we utilize as much of the animal as possible so as little as possible goes to waste. At the end of the day, these are wild caught pigs that we did not raise. When we re test nutritional information, there will always be some variance due to the seasonality of when these pigs were harvested.
