Ancestral Chicken Lettuce Wraps With Grilled-Peach Gochujang Sauce

Ingredients:

1 packages Force of Nature Ground Chicken Ancestral Blend
- 2 ripe peaches, halved & pitted
- Butter-lettuce leaves (or Better Crunch)
- ½ cup chopped peanuts
- 4 green onions, thinly sliced
Sauce:
- 2 Tbsp gochujang · 2 Tbsp soy sauce
- 1 Tbsp rice vinegar · 1 tsp minced fresh ginger
- 1 tsp minced garlic · 1 Tbsp white miso
- Salt to taste
Preparation:
- Brush peaches with oil and season with salt and pepper; grill cut-side down until charred and soft.
- Blend peaches with sauce ingredients until smooth.
- Brown ground chicken in a cast-iron skillet; fold in peach sauce; simmer 2 min.
- Serve DIY-style: platter of lettuce cups, bowl of warm chicken, bowls of peanuts and green onions.
